SOUR CREAM ENCHILADAS

INGREDIENTS

  • 2 lbs cooked meat (cubed/shredded chicken, ground beef or a mixture of both or whatever meat you like)

  • 2 cans enchilada sauce ( HEB Mi Tienda and Siete are both good ones). I use green sauce but red sauce also works.

  • 15ish tortillas- corn work best but flour also work—

  • spices: taco seasoning, salt, pepper

  • 8 ounces sour cream

  • shredded cheese

  • salsa for serving

INSTRUCTIONS

  • In a bowl combine meat, spices, some of your shredded cheese and 1/4 of the green enchilada sauce.

  • Spoon the meat mixture into tortillas and roll and place in a greased 9x13 pan.

  • In another bowl mix the rest of the enchilada sauce and sour cream to make a creamy green sauce. Pour this over the enchiladas.

  • Pour the rest of the shredded cheese on top of the enchiladas.

  • Bake at 350 for 20ish minutes enough to heat and melt the cheese.

Serve with beans on the side OR you can throw the beans in with the meat mixture if you wish.
